Chef's commitment

We incorporate local Yakushima ingredients into our dishes and blend these with key Italian ingrediants imported from Italy.

I personally visited the sites of production for these key ingredients and I endevour to convey the passion these producers have for their products into the dishes served at Il Mare.

Sauce for pizzas

In addition to traditional tomato sauce, we are also incorporating a new style of Napoli sauces. We combine pumpkin and radicchio that are boiled in red wine as well as truffle-flavored mushroom paste to the dough and top it with Yakushima ingredients to create a new Il Mare pizza.

Italian pasta

We use carefully selected Italian pasta. You can feel the true taste of pasta by blending it with the pasta sauce that has been created using the very best ingredients.

Sea salt of Trapani, Sicily

Unrefined sea salt with a mellow saline taste that has tints of sweetness. We can cook pasta with confidence when boiling it with Italian salt. The taste of all Il Mare dishes is greatly enhanced by this sea salt.

Canned tomatoes

Over the years I have experimented with various canned tomatoes, but I have come to depend upon the canned tomato from Naples. It has a moderately sour taste. This tomato is used not only for pizza, but also for pasta and other dishes.

Napoli coffee "KIMBO"

The Il Mare espresso hot coffee uses these KIMBO beans. This is Neapolitan coffee, not Italian coffee!At read this advertizement for KIMBO at the Rome Airport. We are confident that these coffee beans offer the customer the charm of Italian espresso as much as possible.

Vinegars

There are many vinegars made in Italy. We use red and white wine vinegar, white balsamic vinegar and ordinary balsamic vinegar depending on the dish.

Extra virgin oil

High-quality extra virgin oil made in the mountain town of Ferla in south-eastern Sicily. Just drizzle some olive oil over the finished of the dish and it will create the desired pleasant effect. When guests receive their meal then please try to take in the aroma of this olive oil first.

Cheese

All cheeses at Il Mare are products of Italy. They make perfect accompaniments to our dishes. I always use Italian ingredients to form the basis of the taste. Although photos are not provided, but hams such as prosciutto and salami are from Italy. This is mentioned as I occasionally also use local bacon and in-house produced hams.

Nuts

Due to the high cost of Italtian nuts, I neglected to use them over many years. However, at one point I had the opportunity to taste and smell the aroma of Italian nut and since then I have used nuts from Sicily. As with herbs, I believe that we cannot domestically reproduce their quality and so I resort to Italian products.
